Noble Bootleggers Distilling Co. is a family-owned distillery and regenerative farm located in Longlea, just outside Bendigo, Victoria. Founded by husband-and-wife team Dan and Kristin Lemura, the distillery emerged from their extensive experience in Melbourne's hospitality scene, including their time running the speakeasy bar, The Noble Experiment.
At Noble Bootleggers, the focus is on crafting bold, innovative spirits that push flavour boundaries while honoring traditional distilling methods. Their range includes distinctive gins, amaros, whiskies, and bottled cocktails, each reflecting a commitment to quality and creativity.
Sustainability is central to their operations. The Lemuras practice regenerative farming, repurposing spent botanicals into products like soaps and compost, and integrating circular economy principles into their distilling processes.
Beyond production, Noble Bootleggers actively engages with the community through farmers markets and events across Central Victoria, offering opportunities to connect with the makers and experience their unique spirits firsthand.
